  • Add the remaining sugar and starch to the flour and butter and mix the ingredients with your hands.
  • Divide the dough into 2 parts, one of which should be almost twice the size of the second.
  • Place most of the dough in a greased pan, level it, covering the bottom and edges of the pan with dough.
  • Place the curd filling on the dough and smooth it out.
  • Sprinkle with the remaining dough and smooth it out with your hands.
  • Place the pan with the cheesecake in an oven preheated to 180–200 degrees. Bake dessert for 20 minutes.
  • Reduce the temperature and continue baking for about the same time until the pie is done.

Royal cheesecake prepared according to this recipe will taste better chilled, although if you don’t wait for it to cool down and try it hot, it won’t disappoint you either. Raisins in the recipe can be completely or partially replaced with other dried fruits, cutting them into small pieces.

Royal cheesecake with fresh berries

  • wheat flour – 0.32 kg;
  • butter – 0.2 kg;
  • cottage cheese – 0.5 kg;
  • chicken egg – 5 pcs.;
  • sugar – 0.25 kg;
  • soda – 5 g;
  • vanilla sugar – 15 g;
  • starch – 30 g;
  • fresh or frozen berries (cranberries, currants) – 100 g.

Cooking method:

  • Combine cottage cheese, pureed through a sieve, 0.2 kg of sugar, vanilla sugar and eggs. Beat with a mixer.
  • Sift the flour and coarsely grate the frozen butter.
  • Mix flour with soda, pour into a container with oil. Place the remaining sugar there. Knead the dough to a crumb-like consistency. Divide into two unequal parts.
  • Wash, sort the berries, let them dry. Frozen berries must be allowed to thaw, then the juice that has leaked from them must be drained.
  • Place most of the dough into the pan, covering the bottom and sides.
  • Place the curd mass, pour the berries on it, after mixing them with starch.
  • Cover with the remaining crumb mixture of butter, flour and sugar.
  • Place in a preheated oven. Bake for the first 20 minutes at 180 degrees, the remaining time (until ready) at 160 degrees.

Royal cheesecake with berries can be served warm or cold. If it cools, it will taste like cake.

Chocolate royal cheesecake with cottage cheese

  • cottage cheese – 0.5 kg;
  • cocoa powder – 30 g;
  • soda – 5 g;
  • chicken egg – 2 pcs.;
  • butter – 0.2 kg;
  • wheat flour – 0.2 kg;
  • sugar – 100 g;
  • vanillin - on the tip of a knife.

Cooking method:

  • Rub the cottage cheese through a sieve, mix with eggs and three tablespoons of sugar. Add vanilla.
  • Beat the curd mass with a blender or mixer and set aside temporarily.
  • Grind the butter on a grater with large holes, having cooled it thoroughly before doing so.
  • Mix the sifted flour with baking soda and cocoa powder.
  • Combine flour with butter and remaining sugar. Rub with your hands until you get buttery crumbs.
  • Separate a third of the dough and set it aside. Cover the bottom and sides of the pan with the remaining dough.
  • Fill the dough curd mass, cover with reserved batter.
  • Place the pan in an oven preheated to 200 degrees. After 15 minutes, reduce the temperature in the oven and bake the king cheesecake until done.

The contrast of chocolate dough and white airy filling makes the royal cheesecake prepared according to this recipe especially refined and appetizing. It is advisable to serve it chilled. It will look even more festive if you top it with white or dark chocolate fondant and decorate it with cocktail cherries.
